Healthy Peanut Butter Greek Yogurt Banana

Ingredients

  • 4 medium ripe bananas (about 480g), peeled and sliced 1/2-inch thick on a diagonal
  • 1 tablespoon coconut oil or unsalted butter
  • 1 teaspoon ground cinnamon
  • 2 cups (480g) plain, non-fat Greek yogurt
  • 1/4 cup (64g) natural creamy peanut butter (no added sugar)
  • 2 tablespoons honey or maple syrup, plus more for drizzling
  • 1/4 cup (30g) chopped unsalted peanuts or pecans, toasted (optional)

Instructions

  1. Heat a large non-stick or cast iron skillet over medium heat. Add the coconut oil or butter and let it melt, swirling to coat the pan. The oil should shimmer slightly but not smoke.
  2. Add the banana slices in a single layer without overcrowding. You may need to work in two batches. Sprinkle half the cinnamon over the bananas.
  3. Cook the bananas without moving them for 2-3 minutes, until the bottoms are deeply golden brown and caramelized. Use a spatula to gently flip each slice. Cook the second side for another 2 minutes until similarly colored and the bananas are tender and fragrant.
  4. While the bananas cook, in a medium bowl, combine the Greek yogurt, peanut butter, and honey or maple syrup. Whisk vigorously until the mixture is completely smooth, thick, and creamy. Set aside.
  5. Divide the warm banana slices among four bowls or plates. Spoon a generous portion of the peanut butter yogurt sauce over the warm bananas. The residual heat will gently warm the sauce.
  6. If using, sprinkle the toasted chopped nuts over the top for added crunch. Drizzle with a little extra honey or maple syrup if desired. Serve immediately.
