Ingredients
For the Slow-Braised Beef Stew
- Boneless Beef Chuck Roast: 900 g (2 lbs), trimmed and cut into 1.5-inch (4 cm) cubes
- Olive Oil or Beef Tallow: 2 tbsp (30 ml), divided
- Yellow Onion: 1 large (chopped)
- Carrots: 3 large (peeled and cut into thick coins)
- Celery Stalks: 2 stalks (sliced)
- Garlic: 4 cloves (minced)
- Tomato Paste: 2 tbsp (30 g)
- All-Purpose Flour: 2 tbsp (30 g) (use cornstarch or GF flour blend for gluten-free)
- Beef Bone Broth: 720 ml (3 cups)
- Worcestershire Sauce: 1 tbsp
- Bay Leaves: 2 whole
- Fresh Thyme: 4 sprigs (or 1 tsp dried)
- Fresh Rosemary: 2 sprigs (or ½ tsp dried)
- Frozen Green Peas: 1 cup (150 g)
- Fine Sea Salt: 1½ tsp (or to taste)
- Freshly Cracked Black Pepper: 1 tsp
For the Creamy Mashed Potatoes
- Yukon Gold Potatoes: 1.2 kg (2.5 lbs), peeled and cut into 1-inch cubes
- Unsalted Butter: 75 g (5 tbsp), melted
- Whole Milk or Heavy Cream: 120 ml (½ cup), warmed
- Sour Cream or Cream Cheese: 2 tbsp (optional, for extra richness)
- Salt & White Pepper: To taste

Phase 1: High-Heat Browning & Searing
- Time: 15 Minutes
- Intensity: High Thermal Energy (Searing Heat)
- Season Beef: Pat beef cubes dry with paper towels. Season generously with salt and black pepper.
- Sear Meat: Heat 1 tablespoon of olive oil in a Dutch oven over medium-high heat until shimmering. Add beef in a single layer (cook in two batches to avoid crowding). Sear for 6 to 8 minutes , turning occasionally until a rich, deep brown crust forms on all sides. Transfer browned beef to a plate using a slotted spoon.
Phase 2: Aromatic Base & Deglazing
- Time: 10 Minutes
- Intensity: Medium Stove Heat
- Sauté Aromatics: Reduce heat to medium. Add remaining oil, chopped onions, carrots, and celery to the pot. Cook for 5 minutes until soft and translucent. Add minced garlic and tomato paste; cook for 1 to 2 minutes until fragrant and deepened in color.
- Build Roux & Deglaze: Sprinkle flour over the vegetables and stir continuously for 1 minute to cook out the raw flour taste. Slowly pour in beef broth while scraping up all the savory browned bits ( fond ) stuck to the bottom of the pot. Stir in Worcestershire sauce, thyme, rosemary, and bay leaves. Return the beef and accumulated juices back to the pot.
Phase 3: Gentle Slow Simmer
- Time: 1 Hour 45 Minutes
- Intensity: Low Slow-Simmer (90°C / 195°F)
- Simmer: Bring liquid to a gentle boil, then turn heat down to low. Cover with a tight-fitting lid and simmer gently for 1 hour and 30 minutes to 1 hour and 45 minutes , stirring occasionally, until the beef is melt-in-your-mouth tender.
- Add Peas: During the last 5 minutes, remove bay leaves and herb stems, then stir in frozen green peas. Adjust salt and pepper to taste.
Phase 4: Creamy Mashed Potatoes
- Time: 25 Minutes (Concurrently during the last 30 min of stew simmer)
- Intensity: Medium Boil to Gentle Mashing
- Boil Potatoes: Place cubed Yukon Gold potatoes into a large pot and cover with cold water by 1 inch. Add 1 tablespoon of salt. Bring to a boil over high heat, then reduce heat to medium and boil for 15 to 18 minutes until fork-tender.
- Mash & Season: Drain potatoes thoroughly and return them to the warm pot for 1 minute to dry off excess steam. Mash using a potato ricer or masher. Stir in melted butter, warmed milk (or heavy cream), sour cream, salt, and pepper until fluffy and smooth.
