Equipment
- Mandoline Slicer: Essential for uniform thickness ( aim for 1/16th inch / 1.5mm). Knives rarely cut thinly or evenly enough.
- Air Fryer: Basket-style or oven-style.
- Large Mixing Bowl: For soaking.
- Clean Kitchen Towels or Paper Towels: For drying.
- Oil Mister or Spray Bottle: Spraying yields far better coverage than pouring oil.
Ingredients
- 4 Medium Russet Potatoes (approx. 1.5 lbs / 680g) — Russet potatoes are mandatory due to their high starch content and low water content.
- 1.5 Tablespoons Neutral Cooking Oil (Avocado oil, High-Oleic Sunflower oil, or Extra Virgin Olive Oil)
- 1.5 Teaspoons Fine Sea Salt or Kosher Salt
- Optional Seasonings (Post-Cook): Classic BBQ: 1 tsp smoked paprika, 1/2 tsp garlic powder, 1/4 tsp onion powder, 1/2 tsp brown sugar.
- Sour Cream & Onion: 1 tsp buttermilk powder, 1/2 tsp onion powder, 1/2 tsp dried parsley.
- Salt & Vinegar: 2 tbsp white vinegar added directly to the cold soak water, plus sea salt after cooking.
Instructions
- 1.Prep and Slice the Potatoes: Mandoline setting: 1/16 inch (1.5mm).
- Scrub the Russet potatoes thoroughly under cold running water. You may leave the skin on for a rustic finish or peel them completely for a traditional look. Using a mandoline slicer, carefully slice the potatoes into paper-thin rounds. Consistency in thickness ensures every chip cooks at the exact same rate.
- 2.The Cold Water & Starch Soak: 30 minutes duration – Do not skip.
- Transfer the sliced potatoes into a large bowl. Cover them completely with cold water and add a handful of ice cubes. Agitate the slices gently with your hands; you will immediately notice the water turning cloudy. Let them submerge for 30 minutes . Drain the cloudy water, refill with clean cold water, and rinse until the water remains crystal clear.
- 3.Complete Moisture Removal: Key step for max crunch.
- Drain the potatoes in a colander. Spread clean kitchen towels or multiple layers of paper towels across your countertop. Arrange the potato slices in a single, non-overlapping layer. Lay another towel over the top and press firmly down. Let them air-dry for 5 to 10 minutes until the surfaces feel totally dry to the touch.
- 4.Light Oil Coating: Avoid over-saturating.
- Transfer dry slices to a dry bowl. Spray or drizzle 1.5 tablespoons of oil over the slices. Toss gently using your hands to ensure every single surface has a microscopic layer of oil. Do not add salt at this stage, as salt draws out moisture prematurely and leads to sogginess.
- 5.Phase 1 Cooking: Low Heat Drying: Air Fryer Temp: 300°F (150°C) for 10 minutes.
- Preheat your air fryer to 300°F. Arrange potato slices in the air fryer basket. A slight overlap is acceptable as they will shrink, but do not pile them deep. Cook at 300°F for 10 minutes. At the 5-minute mark, remove the basket and shake vigorously or flip the slices using tongs.
- 6.Phase 2 Cooking: High Heat Crisping: Air Fryer Temp: 400°F (200°C) for 5-8 minutes.
- Increase the air fryer temperature to 400°F. Cook for an additional 5 to 8 minutes, shaking the basket every 2 minutes. Watch closely during the final 3 minutes: chips transition from golden to burnt very rapidly. Remove individual chips as they reach a crisp, light golden-brown color.
- 7.Season and Cool: Season immediately while hot.
- Transfer hot chips directly into a large stainless steel bowl. Immediately sprinkle with sea salt and your chosen seasoning blend. Toss gently—the hot oil residue allows the spices to adhere perfectly. Spread the chips out on a wire cooling rack for 5 minutes; they will continue to crisp up as they cool to room temperature.
