Total time35–40 minutes
Servings4 servings

Equipment

  • Extra-large rimmed baking sheet (half-sheet pan, 18×13 inches)
  • Parchment paper or heavy-duty aluminum foil
  • Large mixing bowl
  • Chef’s knife and cutting board
  • Silicone tongs

Ingredients

Cauliflower Base

  • 1 large head fresh cauliflower (approx. 2 lbs / 900g), washed, thoroughly dried, and cut into uniform bite-sized florets
  • 2.5 tbsp extra virgin olive oil (or avocado oil for higher smoke tolerance)

Crispy Seasoning Blend

  • 1 tbsp cornstarch (or arrowroot powder; ensures a crunchy outer crust)
  • 1 tsp garlic powder
  • 1 tsp smoked paprika (substitute sweet paprika for milder flavor)
  • 1/2 tsp onion powder
  • 1/2 tsp dried oregano
  • 1/2 tsp ground cumin
  • 3/4 tsp fine sea salt (adjust to taste)
  • 1/4 tsp freshly cracked black pepper
  • 1/8 tsp cayenne pepper (optional, for subtle warmth)

Finishing & Garnish

  • 1 tbsp fresh lemon juice (squeezed fresh over hot florets)
  • 2 tbsp fresh flat-leaf parsley , finely chopped
  • 2 tbsp grated Parmesan cheese or nutritional yeast (optional, for an extra umami punch)

Instructions

Step 1: Prep Oven and Sheet Pan

  1. Preheat your oven to 425°F (220°C) . Position an oven rack in the middle or lower-middle third of the oven. Line a large rimmed baking sheet with parchment paper.
  2. Pro Tip: For the absolute crispiest bottoms, place the empty baking sheet inside the oven while it preheats so the florets sizzle the second they touch the pan.

Step 2: Cut and Dry the Cauliflower

  1. Remove the outer green leaves and trim the bottom woody stem of the cauliflower. Cut the head into quarters, slice out the inner core, and break or cut the head into uniform, bite-sized florets (about 1 to 1.5 inches each).
  2. Rinse thoroughly, then pat completely dry with clean kitchen towels . Any excess moisture left on the surface will create steam in the oven and prevent the cauliflower from crisping.

Step 3: Coat with Oil and Seasoning

  1. Transfer the dry florets to a large mixing bowl.
  2. Drizzle with the 2.5 tablespoons of olive oil. Toss well using your hands or large spoons until every crevice of every floret has a light coating of oil.
  3. In a small ramekin, whisk together the cornstarch, garlic powder, smoked paprika, onion powder, oregano, cumin, salt, black pepper, and cayenne.
  4. Sprinkle the spice mixture evenly over the oiled cauliflower. Toss vigorously until the dry blend adheres evenly to all surfaces without clumping.

Step 4: Arrange with Proper Spacing

  1. Spread the seasoned florets onto the prepared baking sheet in a single layer.
  2. Turn as many florets as possible so that their flat, cut sides face down against the hot surface. Ensure space remains between each piece—if the pan is overcrowded, the florets will steam rather than roast. Use two smaller baking sheets if needed.

Step 5: Roast to Deep Caramelization

  1. Transfer the pan to the preheated oven and roast undisturbed for 20 minutes .
  2. Remove the pan, use tongs to flip the florets onto their opposite sides, and return to the oven for an additional 7 to 10 minutes , until the edges are dark golden-brown, crispy, and easily pierced with a fork.

Step 6: Garnish and Serve

  1. Transfer the roasted florets immediately to a wide serving platter. Squeeze fresh lemon juice over the hot cauliflower, scatter with chopped fresh parsley, and finish with grated Parmesan or nutritional yeast if desired. Serve piping hot.

Air Fryer Alternative Instructions

  1. If using an air fryer instead of a conventional oven:
  2. Preheat the air fryer to 390°F (200°C) for 3 minutes.
  3. Prepare and season the cauliflower following the standard instructions above.
  4. Place the florets into the air fryer basket in a single layer (cook in two batches to avoid crowding).
  5. Cook for 12 to 15 minutes , shaking the basket vigorously every 4 to 5 minutes, until the florets are blistered, browned, and crispy.
