Step-by-Step Guide

  1. Arrange Chicken: Place the chicken thighs in the bottom of your slow cooker.
  2. Pour Sauce: In a small bowl, whisk together the honey, soy sauce, garlic, ginger, and ketchup. Pour the sauce mixture over the chicken thighs.
  3. Cook: Cover and cook on LOW for 4 to 5 hours, or on HIGH for 2 to 3 hours, until the chicken is tender and reaches 165°F (74°C).
  4. Thicken Sauce: Remove the chicken thighs and keep them warm. Transfer the liquid from the slow cooker to a saucepan. Whisk in the cornstarch slurry and simmer over medium heat for 3-4 minutes until it thickens into a glossy glaze.
