The sweet potato and black bean filling can be made ahead of time and stored in the refrigerator. When you’re ready for dinner, simply spread the mixture on a tortilla, add cheese, and toast it in a skillet. It’s a quick, healthy solution for busy weeknights or lazy lunches.

Ingredients Needed

  • Sweet Potato (1 large): Cooked and mashed.
  • Black Beans (1 can, 15 oz): Rinsed and drained.
  • Flour Tortillas (4 large): Or corn tortillas for gluten-free.
  • Shredded Monterey Jack or Cheddar (1.5 cups): For melting.
  • Cumin (1/2 tsp) & Chili Powder (1/2 tsp): For flavor.
  • Coriander (optional, chopped): For freshness.
  • Olive Oil or Butter: For crisping the tortillas.

How to Make Quesadillas

  1. Make the Filling: In a medium bowl, mix the mashed sweet potato, black beans, cumin, chili powder, and salt until combined.
  2. Assemble: Spread about 2-3 tablespoons of the sweet potato and bean mixture onto one half of each tortilla. Sprinkle a generous handful of shredded cheese and coriander over the filling. Fold the tortilla in half.
  3. Cook: Heat a small amount of oil or butter in a skillet over medium heat. Place the folded quesadilla in the skillet. Cook for 3-4 minutes on each side until the tortilla is crispy and golden brown and the cheese is melted.
  4. Serve: Cut into triangles and serve hot with salsa, sour cream, or guacamole.
